Raw Honey - Yate Gum


This harvest is from the UNESCO-listed Fitzgerald River Biosphere, on the south coast of Western Australia. The Yate Gum was the first Eucalyptus to be described by a European botanist, by Jacques Labillardiere in 1792.

The honey is medum to light, with a delightful crisp, fresh flavour reminiscent of honeycomb candy. Yate Gum honey is one of 4 honey varieties currently being investigated by the ChemCentre at Curtin University for it's medicinal properties.
